Seimando is a shop that continues to make sweets that make the most of the ingredients. The special dough, made with rice flour from Okayama Prefecture, boasts a delightfully chewy texture. The addition of yam gives it a fluffy, chewy, and soft finish. The balance of flavor and texture between the crispy exterior and the soft interior is exquisite.

The mildly sweet bean paste, made with Hokkaido-grown adzuki beans, pairs perfectly with the dough and chestnuts. The standard flavors available in stores are five types: red bean paste, chestnut paste, sweet potato paste, matcha paste, and mandarin orange paste. In addition, seasonal flavors such as cherry blossom paste and pumpkin paste are also available.

The dough is generously filled with two whole, fluffy chestnuts. They apparently use 4 tons of organically grown chestnuts that meet JAS standards annually.

The Joge halves of the dough are joined together, and the appropriate brand mark for each type is pressed onto them. A sweet and fragrant aroma fills the kitchen.

They also offer bite-sized "Petit Chestnut Paste" and "Petit Red Bean Paste" buns. In addition, the four-leaf clover-shaped "Happiness Buns" have a Western twist and come in three varieties: walnut and custard, walnut and chocolate, and chestnut and chocolate. The flavor and texture of the walnuts offer a different kind of deliciousness compared to the chestnuts.

Another signature product of "Seimando" is "Okayama Sweet Chestnuts." They sell two types: roasted chestnuts and peeled chestnuts. Okayama sweet chestnuts are chestnuts that were developed and improved over 30 years by the Okayama Prefecture Forestry Research Institute in Shoo Town , and were registered as a new variety in 2008. While regular Japanese chestnuts have a sugar content in the low 20s, Okayama sweet chestnuts have a sugar content of 30 degrees or more. "Seimando" carefully selects and uses these Okayama sweet chestnuts, and you can enjoy the natural sweetness of the ingredients without any added sugar. The store also offers "Premium Chestnut Paste Dumplings" made with Okayama sweet chestnuts from their own farm.

The owner is Yoshifumi Kubo and his wife, Chie. The history of "Seimando" began in 2001 with their own brand, "Chie-chan's Ice Cream," named after his wife. After participating in events at department stores nationwide and setting up corners at local roadside stations, they opened a physical store with a manufacturing facility in Kagamino Town in 2007. Currently, they are a popular store in high demand at department stores throughout the country, and their fans are all over Japan. While their chestnut paste dumplings are available for online purchase, this is the only place in Okayama Prefecture where you can buy them directly. Be sure to try them fresh from the oven.
