The sturgeon egg collecting season is from October to March. Therefore, February 11, 2024 will be the last homemade original caviar event of this season.
What is “Freshly made homemade original caviar banquet”?
In addition to the "Playful Caviar" where you can taste and compare caviar, you can also enjoy a course of the hotel's traditional cuisine, as well as a free flow of Miyagi sake and wine carefully selected by our sommelier. You can also watch how caviar is made by purchasing live sturgeon in an aquarium, making it an event where you can experience caviar in its entirety.
Pleasures that can only be found in homemade hotels
Generally, 7% or more salt is used to preserve raw caviar. Our goal was to experience the natural deliciousness of fish roe, rather than the salty taste, and through trial and error, we created the best caviar with a salt concentration of 3%.
At this event, you can see the process from disassembly to preparation, and then try the freshly made flavors on the spot. This is genuine "freshly made" caviar that can only be tasted on the day the sturgeon is purchased.
