What is Hamo (Conger eel)?
Conger eels are fish that belong to the order Anguilliformes and family Pectinidae. As they belong to the order Anguilliformes, they have a long, cylindrical shape like an eel, but they are much larger than eels and have a ferocious side.
Conger eel has many small bones, so to enjoy it, it needs to be "bone-cut". Bone-cutting is a technique that requires skill, as it involves cutting the bone 24 times per 3.3 cm, stopping the knife between the skin and the flesh while cutting the bone. For this reason, conger eel is known as a high-class fish.
