At the foot of the Yatsugatake Mountains, in Hokuto City, Yamanashi Prefecture, there is a sake brewery called Shichiken, which is one of Yamanashi's leading sake breweries. We would like to introduce you to the restaurant Taimin, which features art directly from Shichiken.

The restaurant is known for its delicious dishes made with Shichiken's koji, and offers healthy food.
Koji is used in Japanese fermented foods, giving them a sweet and umami flavor and also having positive effects on health.

"Tainen" is located in Daigaharajuku, which flourished as a post town on the Koshu Kaido road during the Edo period, and is a restaurant operated directly by the sake brewery "Shichiken", which has a 300-year history. The restaurant is located on the second floor of an old house that was renovated from the early Meiji period.

The restaurant is spacious with high ceilings and an open feel. There are about 48 seats, and the tables are made from sake barrels. You can feel the atmosphere of good old Japan.

There are about five different items on the menu, all of which use koji.
There is also an English menu available, which is great news for foreign visitors tourists.

I ordered the "Koji-marinated Salmon Set Meal" for 1,850 yen.

The dish includes salmon marinated in koji (made with sweet koji), thick omelet, finely-prepared soy pulp, a small bowl of seasonal vegetables, barley rice, country soup, sake lees agar, and pickles.
The salmon slowly marinated in koji made by the brewers is delicious.

The salmon is soft and slightly sweet, with a rich flavor. It goes well with rice. The gentle flavor will fill you up.
